Pancake with müsli and bananas
I have always been asked to write down the recipe of my well-loved müsli & banana pancake, and I have always put it off as I do not messure the ingredients. I cook from the tips of my fingers. Yesterday I made an effort to note down all the steps, and here they are! You might want to try it out and adapt it to be your own. :-) Good luck!
Ingredients:
1 ½ cups of self-mixed müsli (cereal)
(Oat flakes (oatmeal), sunflower seed, almond chips, raisin etc.)
3 eggs
1 cup of milk
½ cup of sugar, 3 bags (25 Grams) of vanilla sugar
1 cup of flour
3 very ripe bananas
1 cup of coconut flakes
1 table spoon of oil or butter
How to do it:
1. Put the müsli, eggs and milk in a mixing bowl, stir with a wooden spoon and let it rest for about 15 minutes so that the müsli will be soft.

2. Put sugar and vanilla sugar in the bowl and mix well.

3. Give the flour into the mixture and stir well.

4. Peel the bananas and mash them with a folk, the way you would do it for a baby,

and put it in the bowl and stir well.

5. Put coconut flakes into the mixture, and stir until you get a thick muddy mixture

6. Your batter (mixture) should look similar to this:

(If your batter is a bit too liquid, put some more coconut flakes or flour in it. The mixture should hold together well. It should not flow. )
7. Put oil or butter in a non-stick pan and cover it evenly. Do not overheat your pan. Scoop the pancake mixture and put it on the pan.

8. Turn the pancake over when the one side is already brown.

9. If you pan is big, you can make 4 scoops for one round.

10. You do not need to add oil or butter anymore for the rest of the mixture. That is why you use non-stick pan. Be careful: Moderate heat. Work it off until you have no more batter left.
Now it is ready to be served. You can serve it warm with honey, maple syrup or marmalade. It is good to go a long with tea, coffee or milk.

It is also wonderful to enjoy it cold as a snack to fuel your energy.
